In real life, Ariana Grande’s ponytail hairstyle is somewhat of an iconic look for her. In the bridge of the song, we find that she lets her hair down (relaxed) for him. This is figuratively Ariana Grande letting her guard down with this person she trusts.

Grande’s hair is an important part of her life, just as anything else, if not even more. Hence, letting someone else touch her hair is Ariana Grande’s way of telling them that they are both important and special to her.
